1 HOUR CHILI CON CARNE
Let’s talk chili, yeah? I’ve shared my recipe for 15 Minute Chili Tom, however, I go low and slow for my 1 Hour Chili Con Carne. Inspired by Mom’s chili, which was nothing more than a handful of ingredients: oil, onions, chili powder, ground beef, tomato sauce, kidney beans—seasoned with salt and pepper and the key ingredient, vinegar—I’ve made a few modifications from her recipe but haven’t reneged on slow simmering till the sauce just about thickens to a richly robust and tangy gravy. I’ve aided more allure by adding two cheeses (extra sharp cheddar and Monterey jack) and tossing it under the broiler to a golden bubbly.

Makes 6 – 8 Servings
INGREDIENTS
2 Tbs – Extra Virgin Olive Oil
2 Tbs – Ancho Chili Powder
2 Tbs – Ground Cumin
2 Tsp – Ground Chipotle Powder
2 Tsp – Cayenne Pepper
2 Tsp – Ground Cinnamon
1 Tbs – Cocoa Powder
2 Tbs – Double Concentrate Tomato Paste
5.5 Oz (About ½ Link) – Reynaldo's Pork Chorizo
2 Lb – Ground Beef, 90% Lean
1 Tbs – Goya® Adobo All-Purpose Seasoning with Pepper
6 Cloves – Garlic, Finely Grated
1 Tbs and 1 Tsp – Distilled White Vinegar
1 (30 Oz) Can or 2 (15.5 Oz) Cans – Dark Red Kidney Beans, Drained and Rinsed
2 Tbs – Ketchup
1 Cup - Low Sodium Chicken Broth
½ Cup – Extra Sharp Cheddar Cheese
½ Cup – Monterey Jack Cheese
1 Cup – Chopped Scallions, Stems and Leaves, Chopped
THE NITTY GRITTY
In a large skillet, or broiler-proof pan, heat oil at medium high. Add spices, cocoa powder and tomato paste; stir continuously not to burn to cook rawness out of spices and paste. Squeeze out chorizo from casing; break apart with spoon and cook for about 3 – 4 minutes (sputtering will occur). Add beef, also breaking apart into pieces, stir to coat; season with adobo seasoning. Cook for 5 – 6 minutes, stirring occasionally. Add garlic and vinegar; continue stirring and cook for about a minute, or till acidic smell from vinegar dissipates. Combine beans, ketchup and broth; reduce heat to medium low and cook, uncovered, for up to 45 Minutes, or till sauce nears thickening. Add cheeses and broil on high till golden and chili is bubbling. Garnish with scallions before serving.
