A PORK FRIED RICE STORY
Now, I know this recipe screams phone-in, I assure you it’s not. A Pork Fried Rice Story is to Christmas as an official Red Ryder carbine-action two-hundred-shot range model air rifle with a compass in the stock and this thing which tells time. Yes, I once did a Christmas dinner inspired by the Chinese restaurant scene in ‘A Christmas Story’ and, I have to tell you, it was one of the most memorable Holiday meals I’ve ever done and so ridiculously easy to make; beginning with this beloved Chinese-American side.
PREP/COOK TIME: 30 Minutes
Makes 4 Servings
INGREDIENTS
2 Cups – Instant, or Long Grain, White Rice, Cooked and Cooled to Room Temp
1 Lb - Boneless Pork Loin Country-Style Ribs or Chops, Cut into ½” Pieces
½ Tsp – Kosher Salt
1 Tsp – Coarse Black Pepper
2 – Medium Carrot, Peeled and Thinly Sliced
2 Stalks – Scallions, Stems and Leaves, Chopped
1 Tsp – Garlic, Finely Grated
¼ Cup - Kikkoman Naturally Brewed Soy Sauce
2 – Eggs, Whisked
½ Cup – Frozen Green Peas
2 Tbs – Vegetable Oil
THE NITTY GRITTY
In a medium mixing bowl, season pork with salt and pepper; mix to combine. In a large non-stick pan, warm 1 Tbs of oil at high heat. Add pork; cook pieces till golden (about 3 – 4 minutes). Add garlic and stir; cook till fragrant. Add in carrot slices and scallion stems and cook for about 1 minute. Add remaining tablespoon of oil and cooked rice; stir to combine. Pour in soy sauce; stir to coat evenly. Make a well in the center of pan and add eggs; scrambling into rice till combined. Finish with peas; giving one last stir before serving. Garnish with scallion leaves, more soy sauce to taste and a drizzling of sesame oil. Enjoy!
