'CLASSIC' TURKEY HASH

Voltaire once said, 'with great leftovers comes great responsibility.'

Ok, perhaps he didn't. But, nevertheless, no words could ring truer when after the gobblism of Thanksgiving has wound down, you are now confronted with a fridge full of leftovers and endless possibilities. Turkey sandwiches? Oh, no...well, maybe one or two in the meantime, but one of my favorite day after Thanksgiving recipes is 'Classic' Turkey Hash.

It's classic in that it's been a time-honored recipe for many years with my family and, truthfully, there's virtually no recipe to follow at all; just three simple ingredients you already have on hand at the moment: turkey, stuffing and gravy.

PREP/COOK TIME: About 30 Minutes

THE NITTY GRITTY

I combine leftover Farce à la Hâte with slices of turkey breast and thigh meat and drench it with as much Shiitake and Herb Au Jus that I have (or even store bought turkey or chicken gravy in a pinch, if not enough homemade); cook it in a large skillet, or pan, in about 1 - 2 tbs of olive oil over medium high heat. Garnish with fresh herbs and serve alongside a simple salad or mashed potatoes and enjoy.
