EZ ANCHOVY GARLIC BUTTER

Everything is better with butter. Garlic makes it great. Anchovy? Exceptional. I had a love affair with Anchovy Butter for a fleeting but fantabulous moment heretofore. This dalliance has been rekindled, however, with my EZ Anchovy Garlic Butter; which is now very well becoming my own magnificent obsession.

PREP/MIX TIME: 10 – 12 Minutes
Makes 2 Logs

INGREDIENTS 

1 Lb – Unsalted Butter (Softened)

1 (2 Oz) Tin – Flat Anchovy Fillets in Olive Oil, Roughly Minced

2 Tb – Finely Grated Garlic

2 Tsp – Worcestershire Sauce

½ Tsp – Coarse Black Pepper

Kosher Salt to Taste

THE NITTY GRITTY

Using a stand-mixer with paddle attachment, add butter, anchovies (including olive oil), garlic, Worcestershire sauce and pepper to bowl. At medium speed, cream ingredients till blended and smooth (about 4 – 5 minutes); season with salt to taste. Shape butter into a log, wrap in parchment and cling-film to store up to 5 days in the fridge, 6 months in the freezer. If using immediately; chill for at least 2 hours.

Serve on top of steak, vegetables, even fish – gorgeous over broiled salmon. As you can see by my pics I did none of that when there’s a loaf of French baguette to be eaten and the opportunity to binge presents itself.
