GLUTTONOUS PIG AND KALE

If you find pork cooked three ways in one recipe gratuitous, then I strongly recommend you avert your eyes. My Gluttonous Pig and Kale is not for the faint of heart, literally. It’s an unrelenting, unremorseful exercise in epicurean sin: boneless pork loin chops seared in pork belly fat then simmered over ‘braised’ kale with crisped pork belly bits and chopped ham steak. What’s more, it’s unrepentantly delicious. Trust me…I’m not telling you take a bite of an apple after all.

PREP / COOK TIME: 40 Minutes
Makes 3 – 4 Servings

INGREDIENTS 

2 ½ Lbs – Boneless Pork Loin Chops

½ Tsp - Kosher Salt

½ Tsp – Coarse Black Pepper

2 Tb – NOYA Adobo All-Purpose Seasoning

1 Tb – Ground Garlic Powder

2 Tsp – Ground White Pepper

1 Tsp – Table Salt

1 Tsp – Finely Ground Dried Mexican Oregano

½ Tsp – Ground Turmeric

¼ Lbs – Pork Belly, Diced, or Bacon, Chopped

1 Tbs – Extra Virgin Olive Oil

½ Cup – Apple Cider Vinegar

1 Cup – Angry Orchard® Crisp Apple Hard Cider

1 Tbs – Unsalted Butter

1 (6 Oz) Package - Farmer John Classic Smoked Ham, Chopped Into 1” Pieces

1 Lbs – Kale, Chopped, Washed and Dried

NOYA ADOBO ALL – PURPOSE SEASONING

1 Tb – Ground Garlic Powder

2 Tsp – Ground White Pepper

1 Tsp – Table Salt

1 Tsp – Finely Ground Dried Mexican Oregano

½ Tsp – Ground Turmeric

THE NITTY GRITTY

In a large non-stick pan, warm oil at medium high heat. Add pork belly; cook till fat is rendered and pieces are nothing more than crisp bits. Using a slotted spoon, transfer bits to a paper towel to catch oily excess.

Meanwhile, season chops with salt, pepper and adobo; rub to coat. Add pork to same pan; brown to sear on both sides (about 3 -4 minutes). Remove chops to plate; cover loosely with foil to keep warm.

Add vinegar and hard cider; deglaze pan and simmer till reduced by half. Add butter; cook till completely melted.

Add ham and pork belly bits; cook for about a minute. Add kale; stir till combined—cover and let cook for about 2 minutes till greens begin to wilt.

Return chops and any residual juices back to pan. Cover and reduce heat to medium; cook for another 5 minutes.

Serve alongside mashed potatoes, or something healthy (if you must), but don’t let that Angry Orchard go to waste!!
