JUST HOLLANDAISE
My JUST Hollandaise looks like traditional hollandaise sauce and tastes like traditional hollandaise sauce because, for all intents and purposes, it is hollandaise sauce; using JUST Egg 100% Plant Based instead of the proverbial vitellus, the result is a smooth, luxurious sauce that may very well best the original. No clucking around.
PREP/BAKE TIME: 15 Minutes
Makes a Little Over 1½ Cups
INGREDIENTS
½ Cup – Just Egg
2 Tb – Fresh Lemon Juice, or Apple Cider Vinegar
Pinch of Cayenne Pepper
4 Tb – Smart Balance® Buttery Spread
½ Cup – Warm Water
Kosher Salt and Coarse Black Pepper to Taste
THE NITTY GRITTY
In a bowl over a double boiler at medium heat, combine JUST Egg, lemon juice, cayenne and ¼ Cup water; whisk consistently till light and frothy.
NOTE: Not dissimilar to real eggs, JUST Egg will begin to curdle if overcooked. Be mindful of your bowl getting too hot; lower heat when necessary. If sauce does begin to break, remove bowl from heat and add 1 – 2 Tb of hot water just as you would with traditional hollandaise if separated; whisk with sheer ferocity.
Add Smart Balance® Buttery Spread 1 Tb at a time, whisking continuously till sauce becomes light and velvety. Add remaining ¼ Cup water if needed; season with salt and pepper.
