SPEEDY SPINACH SUB
Fast food doesn’t have to come from a drive-thru processed and wrapped in empty calories. Speedy sustenance is seemingly seconds away from stove to stomach with my spinach ‘hero’ saving me from the pangs of hunger every time.
PREP/COOK TIME: 15 Minutes
Makes 1 – 2 Servings
INGREDIENTS
1 Tbs – Extra Virgin Olive Oil
1 Tsp – Crushed Red Pepper
10 Oz (One Bag) – Baby Spinach, Washed
½ Tsp – Kosher Salt
½ Tsp – Coarse Black Pepper
¼ Lbs – Whole Milk Mozzarella, Sliced
½ Cup - Pecorino Romano Cheese, Shredded
1 Loaf – French Baguette (or a Good, Crusty
Bread with Soft Interior), Cut Lengthwise
THE NITTY GRITTY
In a large non-stick pan, warm oil at medium high heat. Add garlic; reduce heat to medium and stir till aromatic and golden. Add crushed red pepper, to release oils, and stir. Increase heat to high; add spinach and toss till tender. Finish with salt and pepper. Serve on baguette, top with mozzarella slices and shredded Pecorino Romano and enjoy.
