LIKE LAVASH (or, ‘Cracker Bread’)
Before I knew I was making lavash (or some facsimile), it was simply cracker bread to me. And it wasn’t out of necessity as it was me being too lazy to go to market and buy saltines to put in my soup. However, once I started making these flatbreads – using my Everything Dough – they became essential for not only soups, but for charcuterie and cheese boards, or slathered with pub cheese when I was bored, tea time or with butter and jam along with my morning coffee.
Probably the easiest of all the recipes included in my Flour Power Series, I’m including my Spicy Tuna Dip as well on account that it was actually the first thing I had ever made to test out these fast flatbreads, and more importantly, because it’s s’damn good.
PREP/COOK TIME: 1 Hour 45 Minutes
Makes 2 Flatbreads
INGREDIENTS
4 Tb – Extra Virgin Olive Oil ($4.98 16 Oz Bottle / $.15)
1 Tb – Kosher Salt ($2.63 48 Oz Box / $.28)
THE NITTY GRITTY
Preheat oven to 475° F. Once Everything Dough has rested, divide evenly and place each slab onto two 11.75” x 17” baking sheets greased with 1 Tb of oil on both. Roll dough to about 1/8 to 1/16 of an inch. Brush last two remaining tablespoons of olive oil evenly on each flatbread; sprinkling both generously with kosher salt. Bake for 8 – 10 minutes, or till lavash is golden and edges are bronzed.
NOTE: For more tender breads, bake lavash for 3 – 4 minutes.
Transfer breads to a cooling rack for 2 – 3 minutes. Break lavash into reasonable bite-sized pieces and serve with my Spicy Tuna Dip, or your own favorite spreads. Especially good slathered in butter and jam in the morning with coffee or tea.
Like Lavash remain fresh for 3 – 5 days in an air-tight container.
SPICY TUNA DIP
PREP/COOK TIME: 10 Minutes
Makes About 2 Cups
INGREDIENTS
2 Cans – Chunk Light Tuna Fish, Drained ($0.85 5 Oz Can / $1.70)
3 Tb – Mayonnaise ($3.89 30 Oz Jar / $.20)
1 Tb – Ground Cayenne Pepper ($3.44 1.75 Oz Bottle / $.49)
2 Tsp – Dijon Mustard ($1.29 12 Oz Bottle / $.36)
½ Tsp – Coarse Black Pepper ($1.99 2.12 Oz / $.11)
Pinch of Kosher Salt
1 Tb – Fresh Lemon Juice (One Lemon / $0.55)
THE NITTY GRITTY
In a medium mixing bowl, combine tuna, mayo, mustard, cayenne pepper and seasoning till fully blended. Chill for at least 2 hours before serving.
